Meticulously harvested by hand from the Piedmont region in Italy, the ‘white diamonds of Alba’ are known for its spectacular aroma and fragrance. And as white truffle season comes into full swing this month, we share with you the best restaurants in Singapore to try this coveted gem.

Prego

Look no further than Prego to get you started with these luxurious seasonal creations, all served with five grams of shaved black truffle … each! From now to December, truffle indulgence awaits in the form of specials like the creamy Burrata Cheese with Sicilian Anchovies ($38) and luscious Acquerello Risotto ($42) infused with truffles and farmhouse natural butter. There will of course be meat, like the beautifully Larded Veal Loin ($58) and roasted artichokes. White truffles are also made into the Truffle Honey Cacao Mousse ($16) — can dessert get any fancier? Wine pairing is also available from $27 per glass if you’re looking to indulge further.

Publico Ristorante

Publico is presenting a fabulous line-up for just three nights! Curated by Executive Chef Marco Turatti, you’ll find an extravagant five-course pairing menu ($198 on 1 November and $175 on subsequent nights) with highlights like Raviolo filled with housemade Primo Sale cheese and white truffle puree, slow-cooked Beef Cheek with creamy soft polenta and shaved white truffle, and decadent Macadamia Croccantino with Callebaut 75% chocolate mousse and white truffle essence. For the ultimate wine pairing: a series of Borgogno Wines from one of the oldest wineries in the village of Barolo, that still ages its wines in barrels of Slavonian oak.

Garibaldi

White truffle season has come to Garibaldi, the stylish Michelin-starred Italian place along Purvis Street. Think Free-Ranged Poached Egg ($68) with truffle potato cream and porcini mushrooms, a Fagottini Stuffed Pasta ($78) with spinach and ricotta cheese in truffle sauce, as well as Raw Hokkaido Snow Beef Carpaccio ($68) with taleggio cheese dressing. The trademark Tajarin Pasta ($78) from Piedmont with butter and sage is also one to try. Certainly a premium to pay, but it’s every bit worth the money for a joint like this.

Senso

A cool new batch of white diamonds means that Senso (and its ever majestic courtyard) is back with its popular truffle special. Perhaps you’d enjoy the Capesante ($68) — scallops with cauliflower, white truffle, and hazelnut vinaigrette, Carnaroli Risotto ($88) with shaved white truffle, or Butternut Pumpkin Soup ($48) with gorgonzola cream, and yes, more shaved truffle. You can even try the dishes as a three-, four- or five-course menu, starting from $154.

Braci

There’s no doubt that this exclusive Italian hideaway whips up a mean white truffle dish. The highlight: traditional White Truffle Fettuccine ($88) dressed in the richness of an AOP butter sauce, black pepper, duck jus, and five grams of truffle on top. Braci is also hosting a luxurious five-course dinner ($888) on 13 November, paired with the finest wines from around the world — think a Chateau Mosse 1933 and Barolo Bricco Ambroggio 2002 from Paolo Scavino. As for the lineup, how does the Blue Lobster with five peppers jus or Sendai Wagyu with scorzonera and Taleggio cheese sound? All with an abundance of Alba truffles, of course.
