Yàn’s Star Grouper Three Ways Recommendation Menu

Head Chef Ng Sen Tio will be showcasing his culinary prowess as he presents the prized star grouper fish in three unique preparations,  available only from 9 February to 30 March. Embark on a gastronomical journey starting off with the Sautéed Fillet with Luffa and Egg White – delicate morsels of the fish are accompanied by scrambled velvety egg whites and luffa gourd. This is followed by his flavour-packed Braised Fish Belly with Clam Sauce that consists of fried then braised slices of grouper coated in a rich clam sauce glaze. A reflection of the chef’s philosophy that every part of his ingredient should be utilised, the final course, Fish Head and Bone Soup with Chinese Parsley, is a nutritional concoction that brings together often discarded scraps of fish and aromatics like parsley and ginger. Left wanting more? Order any three of their enticing appetisers like Crispy Silver fish or Deep-fried Fresh Mushroom with Salted Egg Yolk for S$20++.

Gibson x The Certain Bar Guest Shift

With Shuhei Nomura of The Certain Bar – a highly-rated cocktail bar located in Fukuoka – helming the guest shift tonight at Gibson, you don’t have to travel far to get a taste of modern Japanese cocktails (S$23 each). What sets these innovative cocktails apart is the incorporation of organic, wild ingredients through molecular gastronomy techniques typically seen in a restaurant kitchen. Expect pleasantly complex tipples, namely Nomura’s take on the Old Fashioned – Togouchi whisky with hints of creamy brown butter and vanilla, or the fruitier Fusen, a mix of yuzu leaf gin with strawberry syrup, lemon, almond essence, and egg white. One thing’s for sure, you’re in for a sensory experience like no other.

Little Joe Beef at Bedrock Bar & Grill

Swing by homegrown steakhouse Bedrock Bar & Grill, winner of Restaurant Association of Singapore’s ‘Best Steak Restaurant’ award in 2019, for its latest edition of World Meat Series. From now till 31 March, indulge in their four dishes starring the finest cuts of organic grass-fed beef flown in from all over the world. Dig into their Sugar Cured Beef (S$38++) paired with pickled pumpkin for that added tangy kick or share a Tomahawk Wellington (S$258++) – an upgrade from the traditional Beef Wellington that incorporates truffle mushroom duxelles and foie gras – with your friends. You can also stick to the classics with Steak & Potatoes seasoned with rosemary beef fat and shallot sauce (S$88++).

Te Mana Lamb at La Brasserie

La Brasserie is now showcasing its new arrival, Te Mana – a premium range of lamb renowned for its exceptional marbling and rich flavour profile, and the result of over a decade of experimentation. La Brasserie’s Executive Sous Chef Zacharie Ong has curated six dishes, each highlighting a different cut of the lamb to bring out its best flavours and textures. Some of these dishes are the succulent Lamb Loin (S$61) served with spring garden vegetables, black garlic purée, and caramelised parsnips, and Lamb Shank (S$56) prepared and presented bone-in to preserve the buttery marrow. If you’re in the mood for something experimental, the Arabica Coffee Smoked Lamb (S$30) with an unusual pairing of bittersweet Kahlua ice cream will appease your palate.
