Espresso ‘Chest’

You might know that we are fans of Executive Pastry Chef Sebastien Cocquery-Beraud, who has been with the hotel group for nearly three years now. Together with his team of skilled patisserie chefs, he’s created a refreshing new repertoire of spirited cakes inspired by his childhood in the cool winters of France. He does a beautiful Lemon and Hazelnut Yule Log ($43/73), where vibrant flavours of lemon complementing the classic pairing of crunchy hazelnut and praline in a wintry spectacle. There is also the Espresso ‘Chest’ ($43/73) that’s fashioned after a treasure chest, hiding roasted coffee beans with cream, nutty dark chocolate, and to bring them all together: luscious spiced orange marmalade. Yo-ho-ho!

Closer to his heart, Chef Sebastien has a Traditional Vanilla & Chestnut Yule Log ($43/73) inspired by good ol’ fashioned French-style log cakes (with essence of aged rum added for Christmas cheer) and memories of roasting chestnuts in his parents’ fireplace. Other log cake flavours include the sphere-shaped masterpiece Perigord’s Black Forest Yule Log ($73) and a Santa’s Yule Log ($43/73) that resembles the red man’s iconic coat in strawberry mousse and marshmallow glory.

And for good measure, how about a Spiced Orange Caramel Gateaux ($35/$67), marrying Chef Sebastian’s favourite combination of caramel creme and orange marmalade to bring the taste of Christmas to life?

Savoury treats to complete the package

It isn’t quite Christmas without the large turkey centrepiece, is it? Check out the Roasted Tom Turkey ($182 for 4.5 to 5kg), stuffed with crunchy chestnuts and dressed with luscious giblet gravy. And then, perhaps Prego’s Signature Lasagne ($71) that alternates between heavenly layers of savoury beef bolognese, creamy béchamel, and mozzarella cheese.

Feast on a hearty authentic Italian brunch (from $98++) at Prego complete with live stations, enticing seasonal desserts, or timeless classics like the Kamut Aglio Olio with umami-rich sea urchin and organic caviar in its festive à la carte menu that’s available from 18 to 31 December 2017.

The same goes for a semi-buffet brunch at the sky-high Equinox Restaurant, which sees dishes like Slow-cooked Beef Short Ribs and Roasted Snapper with Winter Succotash, as well as live entertainment (think magicians, carolers, and balloonists) to boot.
