Christmas holds a special place in Chef Damian D’Silva’s heart; it is during this festive season where his fondest childhood memories of family celebrations and feasting lie. From 14 to 31 December, Chef Damian will present more of his cherished heritage Eurasian Christmas recipes, exclusively at Folklore.
Expect new festive fare from Chef Damian’s kitchen such as the White Debal, a savoury and piquant stew of turkey and house-made achar, and the fiery Dry Mutton Curry, a traditional Eurasian dish prepared Indian-style. Whetting the appetite further is the Vindaloo, served as pork chops glazed in a spicy aromatic paste, which joins favourites like Feng and Eurasian Christmas Pie on the menu. For desserts, the Eurasian favourite Sugee Cake makes its glorious return and Chef Damian brings out a new treat from his repertoire, Bolu Cocu, a teatime cake perfumed with grated coconut and the ambrosial scent of spices such as cinnamon, cloves, and nutmeg.
Folklore’s Christmas menu will be available for lunch and dinner from 14 December to 31 December. Festive meal takeaways are available with an advance booking of 5 working days (last day to order is 25 December). Takeaways are available for all items except Eurasian Christmas Pie and Bolu Cocu.
